Roasting is a method of cooking raw ingredients using dry heat. The product being roasted is enveloped completely in hot air using some form of enclosed oven, which provides for a very even heating. This can be further enhanced by adding rotation or tumbling of the oven or the product inside the oven. Roasting is used to take raw ingredients to a state where they can be used in a final product (such as with coffee or cocoa) or to enhance the flavour of products through caramelization and surface browning (as with nuts).
